Plachutta’s Applehorseradish Sauce
INGREDIENTS FOR 4 SERVINGS
3½ medium apples, peeled and cored
1–2 tablespoons lemon juice
10g sugar
15g grated horseradish
Pinch salt
1 tablespoon oil
PREPARATION
Cut up apples, place in a pan along with the lemon juice, sugar and a very small amount of water, cover and steam until soft. Purée the apples, let cool, and combine with the remaining ingredients.
Raw Apple-Horseradish Sauce
INGREDIENTS FOR 4 SERVINGS
2½ tart, medium apples, peeled and cored
2–3 tablespoons lemon juice
15g grated horseradish
10g sugar
Pinch salt
1 tablespoon oil
PREPARATION
Finely grate the apples and mix immediately (to avoid discolouring) with the lemon juice. Stir in the horseradish, sugar, salt and oil.
